We love cake and especially spice cakes. Cakes made with fruit, applesauce, banana, etc., and or veggies like zucchini are also at the top of our list. These tender, moist carrot cake bars with cream cheese frosting fit all this criteria. The carrot flavor, along with our favorite baking spices, cinnamon and nutmeg, make this a cake that is always at the top of our list.
We like this particular recipe because these bars have less sugar and a lot less oil than most carrot cakes, but they are still very sweet and moist.
