Open Faced Eggs Benedict with Foolproof Hollandaise Sauce

Many people have a fear of making Hollandaise sauce. They’ve heard horror stories of the sauce curdling or that it’s labor intensive and time consuming. Some of their worries may be warranted, but if you try this technique for making foolproof Hollandaise sauce, I think you’ll be pleasantly surprised. This sauce is made in the microwave and takes less than 5 minutes. You can easily make it while the eggs are poaching. 

This may not be quite as rich or smooth as the traditional Hollandaise sauce, but considering the time saved and the fact that you don’t have to stand over the stove stirring the sauce so it doesn’t curdle, we think it’s worth the trade off.
