I’m sure you’ve heard of coconut shrimp, but have you tried coconut chicken yet? This Crispy Coconut Chicken with Sweet Chili Dipping Sauce is just as good as the shrimp version, and according to some in our family, even better. Be sure to use Panko when you make this if you want a really crispy chicken. You can find Panko in the Asia section of your local market. If not, it’s available in Asian markets or online.
