We had to bring this up, but depending on your age, you may remember many a summer when this bacon cheese and tomato pie found it’s way to the dinner table. Because tomatoes abounded in the gardens and many families raised their own meat in our neighborhoods, this was a common supper meal.
The taste is similar to a BLT. It is good eaten right out of the oven or even eaten cold the next day. If you are counting carbs, you could ignore the pie crust and make it in a rectangular baking dish as a casserole and it’s just at good.
